Panzanella Tuscan summer salade

A Tuscan salad with stale bread called Panzanella, sweet and juicy tomatoes topped with mozzarella and cucumber for crunch. An ideal recipe for a quick evening meal accompanied by grilled meats. This is my favorite recipe this summer, simple, quick, and rich in taste. I prepare it a few hours in advance and place it in the fridge until ready to serve for maximum flavor.

Panzanella is a tasty classic Tuscan salad with stale bread and tomatoes, it makes a healthy and light meal or a perfect accompaniment to grilled meats.

Ingredients :

  • 1 baguette of slightly stale bread
  • 5 medium tomatoes or a mixture of cherry tomatoes
  • 1 red onion
  • 4 anchovy fillets in olive oil
  • arugula leaves
  • basil leaves
  • Mozzarella ball
  • 1 cucumber
  • black olives
  • Vinaigrette :
  • 6 tbsp olive oil
  • 1 tbsp vinegar
  • 1/2 tsp Dijon mustard
  • Salt
  • pepper

Instructions :

  1. Cut the tomatoes into small pieces or in half for the cherry tomatoes.
  2. Cut the cucumber into slices.
  3. Mince the red onion and drain the mozzarella.
  4. Prepare the vinaigrette:
  5. In a bowl, combine the vinegar, mustard, salt, and pepper. While whisking constantly, slowly add the olive oil until the dressing thickens.
  6. Pour into the bottom of the bowl.
  7. Soak stale bread in cold water (about 5 minutes). When it is soft, cut it into pieces and add it to the bowl.
  8. Incorporate the rest of the ingredients: tomatoes, cucumbers, anchovies, mozzarella, onions and black olives. Mix everything well.
  9. Add the basil leaves and arugula and let stand at least 30 minutes before serving at room temperature.
  10. Before serving drizzle with olive oil (about 2 tbsp) and sprinkle with basil leaves.
