Briouate or Salted Samsa with minced meat

Briouate or Samsa salty version with minced meat, cheese, hard-boiled eggs and green olives, an easy and quick starter to make that ideally accompanies a soup or simply a good salad.

By making a quiche I still had a quantity of thawed minced meat so I decided to prepare salty Samsa, a stuffing that I often make but without eggs or olives because during the month of Ramadan I like to add my little touch of flowers orange tree, by the way it's more my mother's trick and I can assure you it's a pure treat.

I chose a different stuffing from the one I make during Ramadan by adding a hard-boiled egg, green olives and grated cheese. What is practical in brick, Briouate or Samsa is that you can make a good quantity and freeze them. Just before going to the table, take them out of the freezer and fry them (no need to defrost beforehand).

If you have time, I advise you to make a homemade dough you will love, a big difference in flavor with store-bought brick.

Ingredients :

  • 1 onion
  • 350 g minced meat
  • salt
  • cinnamon a pinch
  • 50 g grated cheese
  • 1 hard-boiled egg
  • 1 tbsp chopped parsley
  • green olives a few slices
  • black pepper

Instructions :

  1. Sauté the onion in a pan in a drizzle of olive oil until it becomes translucent.
  2. Add the minced meat and separate it with a wooden fork. Salt and pepper.
  3. Cook for about 5 minutes or until the water evaporates and the meat is cooked. Add the hint of cinnamon and mix well.
  4. Add the chopped parsley and the olive slices.
  5. At the end of cooking, add the grated cheese and the hard-boiled egg cut into small cubes.
  6. Mix everything well, remove from heat and let cool completely.
  7. Place a cac of stuffing on the pastry sheet and shape your samsa.
  8. At this stage we can place them in a Ziploc bag and freeze them.
