Eggplant Mushroom Saute
Ingredients:
- 2 eggplants
- 400 g of cultivated mushrooms
- 1 onion
- 2 capsicum peppers
- 2 green peppers
- 2 cloves of garlic
- 4 tablespoons of olive oil
- Salt
- 1 teaspoon Black pepper
- 1 teaspoon paprika
- 1 teaspoon of thyme
- 1 teaspoon red chili powder
Preparation:
We peel and dice the eggplants, leave them in salted water for 15 minutes, then put them on a paper towel, fry them in hot oil, and put them on a paper towel.
We chop the onion, and garlic and put them in a suitable pan, add olive oil and fry it on the stove, then chop the peppers in julienne and add to the onion. After frying for 1-2 more minutes, we chop the cleaned mushrooms and add them, add salt and spices, we cook until the mushrooms absorb their juices, we take the cooked vegetables from the stove and fry them. We add the eggplant to the vegetables, mix it well and take it to the serving plate and serve.
