ingredients:
- 2 cups granulated sugar
- 2 cups self-raising flour
- 1 cup butter
- 1 cup strong black coffee
- 1/3 cup unsweetened cocoa powder
- 2 eggs
- 1/2 cup of milk
+Powdered chocolate:
- 1/4 cup butter
- 4 tablespoons of milk
- 3 tsp unsweetened cocoa
- 2 1/2 c powdered sugar
+Turtle topping:
- 1/2 c pecans
- 1 c semi-sweet chocolate chips
- 1 c caramel sauce
How to Make an Easy Texas Tortoise Cake
- Preheat the oven to 350 degrees. Grease the pan and grease it with flour or use parchment paper. In a large bowl, combine the self-rising flour with granulated sugar. Set aside.
- In a saucepan, mix 1 cup of butter, 1 cup of coffee, and 1/3 cup of cocoa. Bring the mixture to a boil with constant stirring. Pour in the prepared dry ingredients. Using a hand mixer, mix ingredients on medium speed until wet and dry ingredients are completely combined. Add eggs and half a cup of milk. Mix on medium speed for another minute or so, until well blended.
- Pour into a baking tray, and bake for 25-30 minutes. When the cake is done baking, a toothpick or fork in the middle of the cake should come out clean.
- Prepare the decorations. In a medium saucepan, combine 1/4 cup butter, 4 tablespoons buttermilk and 3 tablespoons unsweetened cocoa powder. Bring to boil on heat, stir constantly.
- Remove from heat and use a wire whisk to gradually mix in the powdered sugar, 1/2 cup at a time.
- Spread or pour the warm decorations over the cake. While the cake is still warm, sprinkle with chopped pecans and chocolate chips. Sprinkle with caramel sauce.
